Inside that cave, gravity, technology, and instinct all guide their wines — especially their Cabernet Sauvignon, which Napa enthusiasts consistently talk about long after they leave.
History
Back in 1997, Julio and Amalia Palmaz (originally from Argentina) bought an historic property that once belonged to early Napa pioneers. Over the next several years they built one of the largest and most advanced winery caves in the valley, marrying innovation with Napa’s deep winemaking roots. From that blend of vision and grit came the estate as it stands today, rooted in family values and technical excellence.
Sustainability
Farming here takes a nuanced, long-term view. The team mixes organic, biodynamic, and erosion-control practices, cover crops in winter, and deficit-irrigation in summer to support soil health, water use efficiency, and micro-climate balance across varied vineyard blocks. The estate even recycles water and was one of California’s first wineries to reach net-zero emissions through cave design and water systems.
Atmosphere
Walking through Palmaz is a little like stepping into the future of winemaking, but with your feet still firmly planted in Napa’s agricultural soul. The massive stone tunnels, lofty fermentation domes, and gravity-flow tanks create a dramatic backdrop, while tasting salons tucked within the cave provide elegant, intimate spots to sip and savor.
Experience
Visits here are by appointment only and built around immersion rather than quick pours. Most experiences start with a guided walk through the cave system, where you’ll learn about how gravity (not pumps) moves wine gently through fermentation and aging. After that, you’ll enjoy a seated tasting of several wines (often including flight pairings or hors d’oeuvres) in one of the cave’s beautiful tasting rooms. Guests consistently say the combination of eye-opening engineering and delicious wines makes this one of Napa’s most memorable experiences.
